Winemaking Process: Grapes from old vines 80% and about 20% in 14 years with vineyards were hand harvested and vinified, partly in the granite mills with a capacity of 5000kg and partly in stainless steel fermentation tanks with a capacity of 9000kg.
The grapes were harvested with a graduation average of 13 to 14 Baume.
The fermentation was stopped with the addition of brandy, so as to obtain a wine with a degree of 19 º while still about 3 º Baume.
This wine was the first stage in stainless steel vats, during which undergoes a natural process of sedimentation. It is then transferred to tanks with about 8500 liters, which remains about 10 years. During this stage, wood is periodically transferred from vessels, a process that occurs in early spring and during this time it suffers from some oxidisation.
Tasting note: Presents a golden color and despite the complexity resulting from its aging in wood, maintains fruity aromas. This combination comes a balanced wine, very fresh but with an ending quite prolonged.
Recommendations: It should be served chilled as an aperitif or with foie gras or other pâtés . It is also good with cold desserts (especially ice cream). Its recommended serving temperature is 13º -14º C.
