Winemaking process: The vinification was in granite treading tanks (lagares), using traditional treading and part in stainless steel tanks. Grapes were picked with 13º or 14º alcohol graduation.
The fermentation was interrupted by the addition of grape spirit (brandy) giving the wine its 19,0 % alcohol by volume and Baumé 2,8 and 3º.
For the first winter this wine is kept in stainless steel tanks outside, so that with the natural cold of the winter the wine suffers a natural process from decantation. In the following Spring it is transferred to large wooden barrels, where they stay for 3-4 years. During this period they are oxidated in order to promote the development of complex aromas.
Tasting Notes: Golden in color, fruity aromas highlighting the aroma of moscatel galego grape. In the mouth it presents a complexity obtained by its aging in oak but quite cool due to its acidity.
Recommendations: It is advisable to drink chilled as an aperitif with fresh cheese, and foie gras canapés. It is a wine with great zeal for ""cocktails"" that is the excellent example "Portonic": white Port and tonic water in equal proportions, ice cubes and half a slice of lemon. It can be served as an appetizer when cold, for a better feel of all its complexity, its recommended serving temperature is 13-14.
