Aguardente de Cana da Madeira - Engenho Novo - Old Brandy 1L

Aguardente from Madeira is a spirit drink produced exclusively by alcoholic fermentation and distillation of the juice of sugarcane, and distilled by traditional methods at less than 96% vol., So that the distillate has the discernible specific organoleptic characteristics of rum.

This spirit is traditionally used for the typical Madeira island drink - PONCHA

PONCHA RECIPE

Poncha is the most traditional drink of Madeira ! That is to say : Who’s going to Madeira and don't try the Poncha drink cannot brag about how well they truly know the pearl of the Atlantic.

Although typical county of Câmara de Lobos , the is known and appreciated all over the island . It can be drunk both in summer with ice, as in the winter, because they contain a huge qunatity of vitamin C (and the alcohol will certainly warm you up!)

INGREDIENTS:

• 1/4L of  Engenho Novo Old Brandy from Madeira Sugar Cane

• 3-5 tablespoons of Sugar Cane Honey from Madeira (or any other honey)

• THE MAGNIFICIENT AND TASTY PASSION FRUIT PULP and the juice of one orange

(For a more traditional and simple version: use the juice of 2 lemons or oranges)

PONCHA PREPARATION:

Note: proportions of 1 glass of brandy for 2.5 glasses of juice/pulp.

Mix the Passion Fruit pulp with the orange juice.

With ” caralhinho ” ( the wood stirrer typical from Madeira ) stir everything well .

Add some sugar cane spirit Engenho Novo and stir well.

Add more honey or brandy, depending on your taste .

Stir everything well again.

Add a glass of water. Stir.

Serve in small glasses.

There is another version of this drink only with orange or lemon.
