Tasting Notes: Aroma alive and focused on the elegant white-fleshed fruit, with a slight floral plant. Very creamy in the mouth, bubble attractive thin and acidic, helping to end a distinct and full of presence.
The harvest for producing sparkling wine begins in early August to find grapes with high acidity and low sugar. The grapes are crushed using a pneumatic press and the first runoff of wort is collected and pressed at 0.5 bar before fermenting in stainless steel tanks at controlled temperatures of 18ºC. After inoculation with selected yeasts, fermentation occurs in stainless steel tanks. In November, the oenology team prepares the base wine with their individual characteristics of aromas and unique tastes.
Winemaking process: After the second fermentation in the bottle, the wine is aged in cellars for a period of 24 to 36 months at a constant temperature of 12ºC and thus finding the perfect balance of wealth, taste and elegance. For removal of yeast the wine goes through the process of remuage for 2 months. The disgorging glacée releases the yeast and then a small amount of expedition liqueur is added to finish the wine. Following this process another period of two months is required before a bottle of sparkling wine is ready to enter the market. It is advisable to consume this wine within 10 months of purchase.
Recommendations: Excellent companion of appetizers of salmon, oysters, or just the natural taste at any time. It should be served at 6-8ºC.
