Tasting Notes: The very fragrant aroma shows elegant floral notes with citrus hints of lemon and orange, and even mineral notes. In the mouth it has a silky texture and a well-integrated refreshing acidity, showing harmony and elegance.
Winemaking process: The Bairrada region has excellent conditions for producing quality white wines with great ageing potential. The winemaking team at Caves São Domingos aim to produce white wines at the highest level which can contribute to changing consumer habits.
The date of harvest is marked according to the tight control of ripening of the grapes, the systematic observation of clusters, vines and leaves the target previously set the intended grapes. The harvesting is done manually in early August. The grapes are selected grape-by-grape and put into boxes with a maximum capacity of 20 kgs. The traditional fermentation off-skins process is carried out with 12 hours of maceration. They are pressed at low pressure in stainless steel vats at controlled temperatures of 18-20ºc for 25 days. The wine is then aged in stainless steel vats.
Recommendations: Serve at 8ºC -10ºC. It goes well with fresh fish and seafood.
