Tasting Notes: This wine has a distinct straw colour, an intense aroma of tropical fruits, vanilla and honey that creates great complexity. Good volume and very well balanced on the palate with a harmonious and long finish.
Winemaking process: The grapes are immediately destemmed and crushed. The juice is cooled to 10ºC for eight hours. After pressing, the wine is clarified by decantation. The temperature is then set at 14ºC and the grape juice is transferred to oak barrels for fermentation. After fermentation, the wine goes through "batonnage" for a few weeks, then is aged until the end of winter. The wine is removed from the barrels for bottling at the beginning of spring.
Recommendations: This wine is a fine accompaniment to baked fish, fish stew, and particularly cod dishes. The Ideal serving temperature is 10º to 12ºC. It can be consumed immediately or stored for 2 to 3 years after bottling, as long as the storage conditions are suitable.
