Tasting Notes: Deep purple red. Look for black fruit, rock rose, cereals, coffee and chocolate. Full bodied, complex with black fruit notes & rock rose. Firm estructure, elegant and with a mouth final fresh and persistent.
Winemaking process:Vineyard orientation, Dry stone-walled terraces, C. E-W oriented. Climate and soil, Mediterranean with continental influence hot and very dry summers. Slate stony soil. Harvest period 3rd and 4th week of September. The harvest is 100% hand harvested. The grapes are destemmed and crushed directly to a vat, 5 days cold soak, alcoholic fermentation at 12ºC and finish at 32ºC. Malolactic fermentation in french new oak. Aged for 12 months in french 1st, 2nd and 3rd years oak barrels.
Recommendations: Serve at 15ºC. Goes well with Mild cow and goat cheeses, Steak tartare, vegetable lasagne, veal stew and beef.
