Tasting Notes: Deep purple red. L ook for intense complexity with black berries, cereals, oak and mineral finish. Ripe layered tannins together with intense flavours in a long mineral finish.
Winemaking process:Vineyard orientation, Dry stone-walled terraces. Climate and soil, Mountainous continental with hot and dry summers. Slate stony soil. Harvest period 4th week of September. The harvest is 100% hand harvested. The grapes are destemmed and crushed directly to a vat, 7 days cold soak, alcoholic fermentation begins at 12ºC and ends at 32ºC, Malolactic fermentation in french oak barrels. Aged in french new and 2nd year oak barrels for 18 months.
Recommendations: Serve at 17ºC. Goes well with Dry cured ham Pata Negra, Manchego cheese, game stew, smoked sausages.
