Tasting Notes: Deep purply red. Look for black berry and a fleshy character with spice notes. Sense the freshness of the lush black fruit in a dense structure and a dark chocolate finish
Winemaking process:
Vineyard orientation, Rolling wide-open terrain. Climate and soil, Atlantic and fluvial network influence with fresh and humid summers. Soil, Mediterranean with continental influence hot and very dry summers. Granitic lomestone gray soil. Harvest period is 3rd week of September. The harvest is 100% hand harvested. The grapes are destemmed and crushed directly to a vat, 3 days cold soak, Alicante Bouschet ferments at 24ºC to preserve primary fruit. Malolatic fermentation occurs in stainless steel vats. Petit Verdot starts fermenting at 12ºC and gradually raises up to 30ºC. Malolatic fermentation occurs in new french oak barrels. 18 months in French new oak.
Recommendations: Serve at 16ºC. Goes well with Strong cheese, game, smoked sausages and dry cured ham.
