Tasting Notes: Purply red in colour. Look for bergamot, violets and blue berries, forest, balsamic and herbal notes, oak and spices. Complex with black and blue berries, balsamic notes with volume, a firm structure and still elegant.
Winemaking process: Climate and soil, Mild climate enclosed in the highest mountains in the country.Granitical sand soil with ranges of slate with clay. Harvest period 2nd week of September. The harvest is 100% hand harvested. The grapes are patially destemmed (30% stems) and crushed directly to a open top vat lagar, 3 days soak, 12 days alcoholic fermentaation with temperature control, gentle punch down twice a day, malolactic fermentation in french new oak. Aged for 24 months in french new oak barrels.
Recommendations: Serve at 16ºC. Goes well with Dry cured ham Pata Negra, soft paste cheese,game stew, roasted lamb.
