Tasting Notes: Red in colour. On the nose for red fruit, liquorice notes and save. On the palate plum and ripe cherry. Balanced structure in a persistent finish.
Winemaking process: Vineyard orientation, Rolling wide-open terrain, N-S oriented / B. NE-SW oriented with 5% slope. Climate and Soil, Mediterranean with continental influence hot and very dry summers. Granitic limestone gray soil. Harvest period 3rd and 4th week of September. The harvest is 100% hand harvested. The grapes are destemmed and crushed directly to a vat, 3 days cold soak, alcoholic fermentation begins at 12ºC and ends at 32ºC, Malolactic fermentation in French used oak (40% of the wine). 40% of the blend aged for 3 months in French used oak.
Recommendations: This wine is a perfect accompaniment with Tapas Petiscos, Prosciutto, Grilled pork, chicken or beef. The best serving temperature is 16ºC.
