Tasting Notes: The wine has a distinct ruby-red colour, a complex aroma of ripe fruit (berries, redcurrants) and oak. Mellow on the palate, with smooth tannins and a lingering finish.
Winemaking process: Hand-picked grapes are unloaded and immediately destemmed and crushed. The fermentation begins in vats at controlled temperature of 28ºC. After fermenting, the wine is sampled on a regular basis, with the best batches being duly identified, set aside and stabilized. Two special batches are then selected, one is aged in French oak, which is then later re-joined with the other batch, which had been kept in tanks.
Recommendations: This wine is a fine accompaniment to grilled or roasted meat dishes, patés and aged cheeses. Ideal serving temperature is 16º to 18ºC. It can be consumed immediately or stored for 2 to 3 years after bottling, as long as the storage conditions are suitable.
