MADEIRA HONEY FROM SUGAR CANE

Very few products can pride themselves of having the historical and cultural patrimony that sugarcane syrup represents at Madeira. The plantations of sugarcane, or sweet cane, are as old as the first steps made by men in the transformation of this island's landscape.

But sugarcane syrup is much more than a testimony of history. It's a living product, modern, constantly adapting and whose art makes Fábrica Mel-de-Cana Ribeiro Sêco the present's most distinguished representative.

RECIPE SUGGESTION

Traditionally used for the typical Madeira island drink - PONCHA

PONCHA RECIPE

Poncha is the most traditional drink of Madeira ! That is to say : Who’s going to Madeira and don't try the Poncha drink cannot brag about how well they truly know the pearl of the Atlantic.

Although typical county of Câmara de Lobos , the is known and appreciated all over the island . It can be drunk both in summer with ice, as in the winter, because they contain a huge qunatity of vitamin C (and the alcohol will certainly warm you up!)

INGREDIENTS:

• 1/4L of  Engenho Novo Old Brandy from Madeira Sugar Cane

• 3-5 tablespoons of Sugar Cane Honey from Madeira (or any other honey)

• THE MAGNIFICIENT AND TASTY PASSION FRUIT PULP and the juice of one orange

(For a more traditional and simple version: use the juice of 2 lemons or oranges)

PONCHA PREPARATION:

Note: proportions of 1 glass of brandy for 2.5 glasses of juice/pulp.

Mix the Passion Fruit pulp with orange juice.

With ” caralhinho ” ( the wood stirrer typical from Madeira ) stir everything well .

Add some sugar cane spirit Engenho Novo and stir well.

Add more honey or brandy, depending on your taste .

Stir everything well again.

Add a glass of water. Stir.

Serve in small glasses.

There is a more traditional version of this drink only with orange or lemon.
