In 1939, Álvaro Matias worked in a grocery in Lisbon. He had left his home town, Vale da Mula (Almeida) to try and find work in the capital.

It was the beginning of World War II. Lisbon was invaded by well-off European refugees and food was beginning to get scarce.

One of those refugees, a Frenchman, stopped one day at the grocery in order to buy smoked ham. Although he barely spoke French, Álvaro managed to sell him the ham and the Frenchman became a regular customer.

Subsequently, a friendly relationship developed between them and the customer even started teaching French to Álvaro, who learned easily.
During his stay in Lisbon, the financial position of Dr. Bayard - this was the Frenchmans name - became more complicated and Álvaro _helped_ him with food he brought back from the grocery.

When the war ended, the Frenchman and his family returned to France. Before leaving, however, he thanked his Portuguese friend by giving him the only valuable thing he still possessed – the formula of the Dr. Bayard cough candies .

Álvaro set up a small cottage industry, where all the family members worked. Today, 90-year-old Álvaro owns a wholly mechanized factory that produces the Dr. Bayard cough candies. The business is nowadays managed by his son José António and by one of his grandchildren.

Since 1949, this famous cough candies are still the same formula. The reason for their success is their composition and the quantities of the ingredients, which must be very precise. Of course today everything is automated. But the recipe remains the same: distilled water, glucose, sugar, honey that comes from Australia and medicinal herbs syrup.
