Tasting Notes: Focused on elegant and mature fruit, with smoked hints, spices and jam notes. A good presence of firm tannins in the mouth and well integrated acidity revealing freshness and a persistent finish.
Winemaking process: The date of harvest was marked according to the tight control of ripening of the grapes. The systematic observation of clusters, vines and leaves the target previously set the intended grapes. The harvesting is done manually for boxes with a maximum capacity of 20 kgs, grape to grape, and in early August. Traditional fermentation off-skins process with 12 hours maceration, pressing at low pressure in stainless steel vat at controlled temperatures of 18-20ºC for 25 days. The wine is aged in stainless steel vats.
Recommendations: It should be served at 16ºC -18ºC. It is paired particularly well with grilled red meats or cheeses.
